Welcome to the first installment of the Slow Cooker Chronicles! I will get the ball rolling with one of my favorite slow cooker recipes. It’s a simple and hearty dish that we like to serve with either rice or pasta of some sort, egg noodles work well. Crusty homemade bread and a salad make it a simple but filling meal.
Slow Cooker Braised Beef & Onions
1 package of stew meat (around 1 lb beef cubed)
1 medium sized onion sliced
1 1/2 cups beef broth or stock
2 tsp Worcestershire Sauce
Pinch of pepper
Place onions in a slow cooker, add beef, sprinkle with pepper, add the beef broth and Worcestershire sauce. Cook for 8 hours on low (or 4-6 hours on high).
A few tips: I put a dish towel over the lid of my slow cooker. I do this for two reason: 1. my slow cooker likes to spit water when it’s going and it makes a mess, 2. it also helps retain liquid. If you can check your slow cooker throughout the day. Sometimes mine boils off the liquid! Sucks to come home to burnt slow cooker! If the liquid is running low, add a little more water. The gravy in this recipe will be thin, you can thicken it by adding a tsp of corn starch to a 1/3 cup of water and adding it to the pot. Mix well and put it on high. Let it boil for a few minutes or until the gravy thickens.
